Normally the online status check is somewhat behind but there are ways to track mail whether it is delivered or not. If you did not use the mail tracking system then check with the 1.800 number if your response really made it or not. Best Wishes!

At least 2 weeks, in my experience, before the receipt of the RFE response actually shows up in their system.
If you want to be "reassured" before those 2 weeks, then call the USCIS nationwide toll free number an talk to an information officer who will confirm to you that your RFE Response has been received and is currently being processed.
Of course, the best proof of receipt is when sending via certified mail, RETURN RECEIPT REQUESTED, or even better yet a FEDEX TRACKING NUMBER, with real online tracking system.
The problem is all correspondence is first sorted out in the "mail room" of the USCIS Service Center where you sent the response and can take days to be distributed and delivered to the USCIS unit and officer's desk working on your case and who sent you the RFE. That officer has to then update his/her case on the computer. As you can understand, this is not really a priority for them. You have to be patient. The main thing is for you to have the receipt signature or proof of delivery.
