I will be graduating and will have 30-60 days to find employment and dont have the opportunity to file for OPT as this is my second masters. My backup plans are to be dependent on my wife's F1 visa by applying for F2. When is the ideal time to file. Should I wait for 60 days and then file or should I file right away? if I file now what if some employer hires me and sponsors H1B?

I see no reason not file now. Even if you find a sponsor, there are no visas available for a year and a half so you would call out of status and be unable to change in the future

Status can only change from one valid status to another. Once you are out of status, you cannot change status. Good luck.
