Change of status from F-1 to B1 while on 60 days grace period after OPT

So the title sums it up. My post completion OPT just ended, about 20 days ago. I Still have 40 days. I want to volunteer with this no-profit organization, in exchange for room and board. No salary. They told me they previously had some people on B1 visa.
I am from Italy, can I do a change of status? IS there a deadline or do I have to go back to Italy?
Your intention to volunteer is admirable, however I don't believe this is a valid B-1/B-2 activity. You will be providing a service to the organization, and receiving a benefit in the form of room and board. This would not be an appropriate B activity, unfortunately. If it was, you could apply for a change of status (COS) and remain in the US, if the COS was filed before the F-1 status, including grace period, expires.
