You can switch jobs but if you do so before the I-485 has been pending at least 180 days, your original petitioner may revoke the I-140 and you would not be able to complete your adjustment. Once 180 days have elapsed, the I-140 cannot be revoked. The new job has to be similar to the one originally approved and the new employer needs to write letter to USCIS informing availability of job, terms of employment and job description.
You can not switch jobs unless certain conditions are fulfilled.
1. The FORM I-485 must be pending 180 days.
2. The prospective job postion is the same or similar occupation classification.
3. The employer has not revoked the FORM I-140.
4. The prospective employer provides USCIS with the details of your prospective job position.
