My ex is taking me to small claims court- suing me for his belongings left at my house.

He is claiming items that were never left at my place as well as for gifts & trips he provided while we were dating. Only socks & underwear were left at my place- which I threw away. What could I do to prove that I no longer am in possession of his things?

Just appear at the hearing and tell the court your story. He has the burden of proving the items existed and that you kept them. If you have any witnesses to say that they never saw the items, that would be helpful. As for trips and gifts, you ex cannot recover any money for those items.
