Can a Texas tax assessor have the sheriff office . come to my house and take my license plates and window sticker off my truck

You need to contact an attorney to assist you with this matter. In most cases, such action is taken only when there has been an error or they believe that the license/stickers are fraudulent.

I have never heard of it but that does not mean it could not happen. . Also, you will get big ticket if you dont stay up to date.

The sticker and plate you had on your truck are your, from paying previously. I have never heard of them being removed at the request of a tax assessor collector. Go to a local atty so it will be easier for them to research this issue. They can probably make a couple of telephone calls to Sheriff and Tax Assessor and figure out what is going on.
