Also, what happens if you leave the country. Can they still sponsor you, how long will it take and will you have an issue entering the US?

There is a visa category for children of US citizens, both adult sons and daughters, and minor children, both married, and single. You can check the visa bulletin for the respective priority dates, at www.travel.state.org

You are not under 21 years old to be listed in an immediate family immigration category for which your parents can sponsor you and get you a green card while you are in USA. There is a different visa category for which sponsorship might be possible, but it does not grant you the right to stay all this time in USA.
