I am the petitioner. I'm filling the I -864 form for my spouse. I quit my job few week ago. but I found a job in USA that starts in 2 weeks. I have the acceptance letter. The interview for my spouse in the US embassy is after 5 days. What type of employment should I check, unemployed or employed?

You should "check" whatever your employment situation happens to be on the day you fill out the I-864.
