I have partnered with a restaurant in Boston and looking for hiring an Indian Chef from South India. What are the visa options available? How long and strenuous the process is?

You'll probably want what's called an H1B visa. The process for getting an H1B is very technical. Generally, you will need to be able to show that you're employing someone for a job that a U.S. citizen can't do. A chef is a fairly ubiquitous job, but you may have arguments that you need this person b/c he cooks a specific kind of menu that you can't find someone in Boston to do. You should definitely get an immigration attorney to help you with this.
The process takes 1 - 2 years. It requires advertising and interviewing, and proof of your ability to pay the wages. You should meet with a lawyer to discuss the details.
There are various visas that might available. However, an H1B would probably be the best option for a good chef, but not somebody who is world-known... However, the H1B comes with technicalities and time restraints.
There are two options one is H-1B in which person needs a bachelor's degree and to perform job duties degree is required. Second option is to do H-2B which is temporary visa valid for 11 months and need advertising, prevailing wages and Form I-129 filing. You need to contact a lawyer to figure out the best option for you.
