Can I be served with an eviction notice in Utah when not inhabiting the property?

Our home had a small fire. We are currently unable to stay in the home while it is repaired. We rent from a family friend with no signed lease. Our landlord has decided a member of our household needs to leave and has served her with a 30 day notice beginning from today, though we are not able to currently stay on the property. He is only evicting this one member of our household, and it is for personal reasons. But as we have no signed lease, I do not know what rights, if any, we have.

It sounds like the ship isn't very tight for anyone in this situation. The landlord may not have the right to evict one member. You should have a signed agreement of some kind. The sub-rent/lease situation may put your family at risk. If you can't live there, it sounds like a good time to call the situation quit as a whole and start over in a new place with all the right docs and agreements signed.
