What happens when I'm accused of conversion but if the video taken was clearer or blown up, they could see that I didn't?

In order for you to be arrested, the store would need to contact the police who will investigate and refer the matter to the prosecuting attorney in your county. If the prosecutor finds that there is probable cause to believe you committed the offense, charging information will be sent to the Court. If the Court agrees that there is probable cause, the Court will either issue a summons requiring you to appear in Court, or a warrant for your arrest. If a warrant is issued, you will receive a bond. The amount of the bond varies from county to county. If you are arrested, hire an attorney or request a public defender. Make sure your attorney knows about any potential evidence that could be used to prove your innocence. It may be possible to enhance the images that you mentioned, discuss this with your attorney. You may also want your attorney to request that the store remove the Facebook post as it may well be slanderous.

With regard to the videotape, please be aware that "enhancement" is sometimes very difficult, if not impossible. There might be a way to magnify the image, but making it clearer is not guaranteed. To do that procedure, it might be necessary for you to hire an expert in video. I've had experience in video enhancement before and it is not the "magic" that some people seem to think.
Additionally, The State is probably not required to do that for you. You could ask the Court for help, but that seems far-fetched. Talk with your attorney.
