I assume that you are charged in Harris County. If so, then you need to do all that you can to come up with a large chunk of restitution to pay up front or the prosecutors will likely not consider offering your probation, and most of the 22 district judges would not consider giving it - especially if you advise that you have so much debt. (One of the main reasons the judges give probation in such large theft cases is to help the complainant get restitution. If you do not seem to be able to provide restitution, then there is little incentive to put you on probation.) I suggest you start going through your assets to sell what you can to raise money, and have in-office meetings with several local lawyers to discuss your case with some depth to help you find a lawyer you can afford.

Embezzlement of more than $100,000 is a second degree felony, which is punishable by imprisonment for a term of 2 to 20 years and a fine of up to $10,000. If you have been arrested and charged with this crime, you need to hire an experienced criminal defense attorney as soon as possible, as this is a very serious matter. Also, to avoid incriminating yourself, do not discuss this matter any further on the Internet. Please give me a "thumbs up" if this answer is helpful.
