I pay her bills, do her shopping and errands, prepare her meals, take her to appointments, attend to her banking, etc.

Some POAs mention payment for services. If the one you have does not mention payment for services then get something in writing after discussing your needs with her. Just helping yourself is likely to get you in trouble later.
