I was at a party, I'm 17. The cops showed up and asked if i had been drinking. I said yes. They didn't breathilize me or anything. They told me to call my parents to come get. Now I hear I might get issued a MIP from that night. Can they legally give me an MIP days after the drinking event took place?

Yes. Since MIP is a misdemeanor, the DA has up to 1 year to file a case against you, regardless of whether or not the police arrested you that night.

Yes they can give you a ticket up to 1 year after the incident. Your statements hurt a possible defense but have an attorney review all the facts of the case before you agree to any plea agreement.

I think the odds of anything happening are incredibly slim. They do not have any proof that you actually possessed alcohol independent of your statement. If you weren't cited that night, I think you dodged a bullet on this one. If charges are filed, then it's time for an attorney to represent you. You don't want to mess around with this charge, since a conviction will mean losing your driver's license for a year.
