I want to obtain a green card through employment by virtue of having "extraordinary ability". Can an unpaid internship count? I know my employer really wants to have me. If not, would a paid one count? thanks

You question is a bit unclear. YOu want an upaid internship? Does the employer want to hire you? What is your field? See below to see if you qualify

Can it count towards what? your experience? If you can qualify as an extraordinary ability alien you do not need an employer to sponsor you.

An unpaid internship would raise a serious question as to whether or not you qualify under "extraordinary ability." USCIS is going to want to know why someone with "extraordinary ability" is taking an unpaid internship.
