I-485 Adjustment of Status, Criminal History
Would previously being arrested for driving with out a driver's license and pleading guilty in court affect the outcome of my AOS application?
When Filling would I need to submit evidence of this?

Possibly. It depends on the exact statute under which you were convicted. In any event, all arrests and convictions must be disclosed as part of the adjustment of status process.
