Given the amount of the transaction this should be filed as a felony. You should always be represented by an attorney on felony matters. If an employer runs a background check they will see the arrest. You mention that you believe that they are indicating that the merchandise was twice the amount that you believed it to be. If you are relating to the paperwork regarding what they want you to pay for the civil compromise a store is legally allowed to collect an amount higher than the value, if you are commenting on the value of the gift cards alone then you should only be held accountable in the criminal court for the value of the gift card. You need to discuss the specific facts with an attorney. I offer complimentary consultations do not hesitate to contact my office.

I agree you need to consult with an attorney in your area. The arrest alone may or may not appear on a private employer background check. If the employer was a public entity (LA County etc) their background checks tend to be more detailed.
