How can one prove when a letter was mailed to someone when a postal meter (not a postmark from the post office) is used? Person claims they got it several days later.

A person who has a specific recollection of the date they placed in the mail may so testify under oath (assuming there's a legal proceeding in which testimony could be offered). Is that what you're asking? Not legal advice, just my two cents. I don't practice law in New Jersey or hold New Jersey licensure. If you need legal advice, please consult a lawyer who does. I practice in Vermont ONLY.
